Against most flying enemies, a Monk will sometimes be able to use Step of the Wind to get enough air(heh) to grapple them or trip them to the ground and prevent them from getting back up. The Mobile feat is incredible for monks specifically because it helps them do this better (It increases their speed, makes it so anyone they target with a melee attack can't OA them, even if the monk misses with said attack). They are usually able to run in and strike and then run away, or chase down ranged enemies who don't want to be in melee in the first place.
